“Cochinita Pibil” – Yucatan Pork for 4

This is a traditional Mexican dish of slow-roasted pork from the Yucatan Peninsula. Picos’ pork is marinated with citrus, onions, garlic, and imported Mexican achiote paste and roasted in banana leaves for over 9 hours, resulting in melt-in-your-mouth, fall apart pork that is ready to be tucked into a taco, eaten with rice & beans, or enjoyed on its own.

Chef Arnaldo Richards is a third-generation chef who started learning his grandmother’s recipes at age 13 while growing up at his family’s restaurants in Monterey, Mexico. Many of those authentic Mexican dishes and sauces are still on the menu at his legendary restaurant, Picos, which opened in 1984 and remains one of Houston’s most beloved Mexican restaurants.
