Wingko Babad is a beloved Indonesian snack, especially popular in Java, known for its chewy texture and rich coconut flavor. Imagine a sweet coconut pancake made from sticky rice flour, grated coconut, and coconut milk, with a hint of vanilla and a drizzle of a warm sauce made from coconut sugar, cloves, and cinnamon. Chef Abe first tried this treat in a local Javanese market, where the aroma of toasted coconut filled the air.
